Grain Free Blood Sugar Stabilising Porridge
As the weather turns cooler in the Southern Hemisphere, maybe a heartier, warmer breakfast is desired…..
This is a great alternative to the carbohydrate loaded traditional porridge or cereal and even more satisfying and fulfilling with out the crash and burn hours afterwards. It’s low-carb, anti-inflammatory and won’t cause blood sugar problems.
Grain Free Blood Sugar Stabilising Porridge
1 cup of cauli-rice
1/3 cup macadamia milk (or preferred milk)
2/3 cup filtered water
2 organic, free-range eggs
2 tablespoons of chia seeds
2 teaspoons cinnamon
2 tablespoons pepitas
Add if desired (raw cacao, berries, nuts, shredded coconut, banana, rice malt syrup etc)
I dont like mine sweet so if you’re like my husband, will need some sweetener
Now…
Cauli-rice – grate raw cauliflower until you have 1 cup.
Bring to the boil the cauli-rice, macadamia milk and water, simmer until cauli-rice is soft (around 10 min).
Remove from heat and whisk in eggs, cinnamon and desired extras.
Serve and enjoy…
