Chia Rocky Road

This is my take on rocky road, made with chia and gut building gelatin. You can’s see it in the picture but there are chocolate bits in there too. With no added sugar this makes a great low carb snack, breakfast or dessert.

Ingredients

Choc bits:

  • 2 table spoons cacao

  • 1/2 cup coconut oil

  • 2 tablespoons natural sweetener (I use raw earth)

Gelatin

  • 3 tablespoons of gelatin

  • 1/4 cup water

Chia Base

  • 1/4 cup chia seeds

  • zest of orange, lemon or grapefruit

  • 1 cup of berries (I used blueberries and raspberries)

  • 1/4 cup sunflower and pumpkin seeds (could use nuts too)

  • 3 tablespoons of goji berries (omit for really low carb)

  • 250ml of coconut milk

  • 1 cup of coconut water

  • 2 tablespoons of sweetener (I use raw earth)

Method

  1. For the chocolate, heat the coconut oil, add the cocoa and natural sweetener. Put into a low dish and place in fridge to set.

  2. Bloom the gelatin by adding water and stirring quickly. Let sit.

  3. Heat the coconut milk and coconut water. Add the sweetener, and gelatin, take off heat.

  4. Add the chia seeds, seeds and rind.

  5. Take the chocolate out of the fridge and break into bits

  6. Add the chocolate bits into the chia mix making sure its cool enough so they wont melt.

  7. Return to fridge to set.
