Fatty Sardine Salad
This is a great simple anti-inflammatory hormone balancing meal. It’s loaded with lots of healthy fats, antioxidants, phytochemicals, and balanced with good sources of protein, plenty of fibre and greens. this will keep you satisfied for hours.
Salad: Serves 2.
2 cups of kale
1 cup of rocket
1 cup roasted brussel sprouts
1 cup roasted sweet potatoe
1 can of sardines in olive oil
1/2 avocado
1 tablespoon pumpkin seeds
kimchi or other kraut
Dressing:
tahini1/2 cup
juice from 1 lemon
1 tablespoon coconut aminos
2 tablespoons olive oil
3 tablespoons water
pinch of celtic sea salt
Method:
Combine the dressing ingredients and stir
Massage into the rocket and kale - let stand for a few minutes
Add all other ingredients and lightly toss.
