Ginger Spiced Mini Muffins

Ginger - Fresh (not dried) ginger has both antimicrobial and antiviral properties. It can help prevent viral infections and has been shown to be particularly effective in human respiratory cells. this is great for how current climate of COVID-19. (2)

Lemon Juice - is high in vitamin C which enhances the immune system and has anti-viral components.

Coconut oil - ‘Contains lauric acid and monolaurin, which researchers believe the potential mechanisms behind its antiviral activity…’ (1)

Ingredients:

  • 3 eggs

  • 1/4 cup almond or coconut milk

  • 1/4 cup coconut oil melted

  • 2 tsp lemon juice

  • 1/4 cup of honey

  • 1 tsp vanilla extract

  • 2 cups of almond flour

  • 6 tablespoons tapioca flour

  • 3/4 tsp baking soda

  • 1 tablespoon of fresh grated ginger

  • 2 tsp of cinnamon

  • 1/2 tsp nutmeg

Method:

  • Combine eggs, milk, lemon juice, honey, vanilla and whisk.

  • In a seperate bowl combine the dry ingredients and mix well.

  • Add the wet mix with the dry and stir well.

  • Pour into prepared mini muffin tins.

  • Bake for 12 minutes.
