Mediterranean Chicken Bake

This one pan dinner is super easy and delicious with a mediterranean flavour.

INGREDIENTS:

  • 6 Chicken thighs

  • 2 zucchinis, slices into small squares

  • 2 red capsicum, cut into smaller peices

  • Sweet potatoe, diced

  • 1/2 cup kalamata olives

  • 1/2 cup olive oil

  • 1 teaspoon minced garlic

  • 1 teaspoon mustard

  • 1/2 cup goats feta (cashew cheese if dairy free)

METHOD:

  1. Place the chicken and the veggies and olives in the pan

  2. Mix the garlic, mustard and olive oil together and pour over everything

  3. Bake for 20 minutes, turn everything over

  4. Bake for another 20 minutes

  5. Take out and add goats cheese while its still warm

  6. Serve with steamed veggies or a garden salad or cauliflower rice
