Raw Veggie Dip

Or scraps dip because you can really use any vegetable you have in the fridge. Dips are a great way to amp your antioxidant and fibre intake up with the addition of nuts and/or seeds for increased fatty acids and minerals.

Ingredients

  • 1 cup coriander

  • 1/2 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/2 cup olive oil

  • 3 cups of mixed veggies (in this picture I used celery, fennel, bok choy, tomatoe and carrot)

  • 1/2 onion

  • 2 garlic cloves

  • 3 table spoons ACV

  • 1/4 lemon or grapefruit juice

Method

  • Blend everything together in a food processor until desired consistency.

  • use a dip or side dish or in my raw veggie wraps
