Green Pancakes

These are a regular in our house and the kids love them. It’s a great way to sneak greens in to them for an iron, folate magnesium, carotenoids, B vitamins and and Vitamin C. As well as the protein, biotin and zinc from the eggs.

4 ingredients are all you need;

  • 4 eggs

  • handfull of spinach or other greens

  • 1 banana

  • coconut oil or butter

Method:

  • Process all the ingredients except oil

  • heat oil in fry pan

  • pour batter into pan, you can make little panckaes or big ones to fill up the pan

  • heat for 2 min both sides

Serve straight up or with your favourite nut butter or tahini for an extra calcium boost. This will serve 4 people.
