Choc Chia Pudding
I love chia seeds they offer a long list of important nutrients, including fiber, protein, manganese and calcium, along with plenty of antioxidants and omega 3 fatty acids which are anti-inflammatory. In terms of hormone health the high amount of soluble fibre they have reduce appetite, stabilise blood sugar and improve insulin sensitivity which supports any type of metabolic syndrome. They also help with bowel movements which are essential in excreting out hormones and toxins and pathogens.
My biggest tip for the use of chia seeds is to soak them over night otherwise they can lead to constipation.
This Chia Choc Pudding is a great breakfast idea or afternoon snack if you’re craving something chocolately and sweet without the extra sugar in store bought treats.
Ingredients:
1/2 cup of chia seeds
1 cup of filtered water
1-2 tablespoons of raw cacao
1 teaspoon of cinnamon or 1 drop cinnamon essential oil
1 cup of coconut milk or other plant based milk
5-10 drops of liquid stevia (I use this one)
Method:
Combine all ingredients together in a large jar, bowl or container, mix well. (remember to use glass, ceramic or stainless steal - read here for why)
Put in the fridge to soak overnight, you may need to add more liquid in a few times.
You can enjoy them as they are or add berries, nuts, seeds or coconut yoghurt.
Options:
Use a sweetener of choice instead of stevia, I like stevia because it keeps it really low carb.
Use coconut water instead of any of the milks.
