Raw Veggie Wrap - Thyroid Support

Raw veggie wraps are a fantastic way to get extra nutrients, antioxidants and polyphenols in.  I created this one with the idea of supporting thyroid health.  The wakame is high in iodine which is used to make thyroid hormones.    Brazil nuts are high in selenium which are needed for the metabolism of thyroid hormones.  Coriander is a natural chelator so will help bind to toxins and excrete them out of the body. Pumpkin seeds are high in zinc which is needed for synthesis of thyroid hormones.

 

These raw veggie wraps are gluten free and dairy free, two foods that we should avoid with any thyroid conditions and are a great alternative to breads.  I use a dehydrator but you could well use an oven too.

Ingredients:

  • 2 zucchini's

  • 1 big handful of spinach

  • 1/2 onion

  • 2 cloves garlic

  • 1/2 cup coriander

  • 1/4 cup Wakame

  • 1/2 cup Brazil Nuts

  • 1/4 cup ACV

  • 1/4 cup olive oil

  • 1/4 cup pumpkin seeds

  • 1 table spoon psyllium husks

Method:

  • Blend everything together in a food processor until it becomes a thick paste.  Use some water if needed.  

  • Spread evenly onto baking paper, then dehydrator tray.

  • Dehydrate for 12 hours on 45 degrees C

Enjoy using it as a wrap, or break into crackers or croutons to put over salads.
