Paleo Zucchini Slice
This is such a staple in our house, it’s a great way to get veggies into the kids, it’s a good one to bulk cook and prepare for brekky, lunch or dinners. You can swap out the zucchini for sweet potato or pumpkin to mix it up from week to week.
INGREDIENTS: (Serves 8)
2 medium size zucchini’s grated
1 carrot grated
1 onion chopped finely
2 cloves of garlic chopped or minced
1/2 cup of almond meal or buckwheat flour
1/4 cup olives sliced
1/4 tsp salt
cracked black pepper
1 tsp of cumin (or preferred spice)
1 tsp turmeric
8 eggs
1 tsp baking powder
1/4 cup nutritional yeast flakes (optional and unfortified if MTHFR)
1/4 cup sunflower seeds
METHOD:
Whisk the eggs in a big bowl.
Add in all other ingredients and seeds and stir well.
Pour into a baking dish
Sprinkle sunflower seeds on top
Bake for 45-55 minutes depending on oven
