Snacky Biscuits

These no sugar, no diary, gluten free snacky biscuits are quick and easy to make. Using almond or coconut flour means you wont get a big blood sugar spike so are great for hormonal health and OK to have while RESETing. The kids love them too and you can mix up the spices every time you make them.

INGREDIENTS:

  • 1 cup of almond meal or coconut flour

  • 1/3 cup of tahini

  • 1 tsp vanilla

  • 1/3 cup of monk fruit sweetener

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/2 teaspoon clove

  • 1/3 cup olive oil

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon bicarb soda

  • 1/4 cup of sesame seeds

  • 2 eggs

METHOD:

  1. Whisk eggs in a bowl

  2. Add olive oil, tahini, vanilla and stir

  3. Add baking soda and powder and monk fruit and stir

  4. Stir through almond or coconut flour

  5. Roll into balls and place on baking tray

  6. Flatten each ball and back for 10-12 minutes
