Upgraded Rocky Road

This upgraded rocky road is a healthy spin on an all time favourite. However this version doesnt send you on a blood glucose rollercoaster and it actually has benefits like medicinal mushrooms for immunity and collagen for skin, hair and gut health.

INGREDIENTS:

  • 1 cup of berries of choice

  • 1/3 cup buckinis

  • 1/2 cup desiccated coconut

  • 1 tablespoon of medicinal mushrooms (I use Superfeast Jing)

  • 1 tablespoon Collagen peptides

  • 3/4 cup extra virgin coconut oil

  • 1/2 cup raw cacoa

  • 1/4 cup tahini

  • vanilla

  • 1/3 cup sweetener (maple or honey) or for a lower carb option monk fruit

  • pinch of salt

  • optional add in (goji berries, sunflower or pumpkin seeds or choice of crushed nuts)

METHOD:

  1. In a mixing bowl mix together the berries, buckinis, cacao, collagen, mushrooms, salt, coconut and any added extras.

  2. In a saucepan melt the coconut oil, add tahini and stir well.

  3. Add the sweetener and dissolve.

  4. Pour over the berry mix and stir well.

  5. Place in fridge until hard and then break chunks off to serve.
