Brussels Sprout Hash
This is a great way to get vegetables like brussels sprouts, carrots and sweet potatoe in to the diet which will help with detoxification to promote hormonal balance. This is suitable for any mean of the day.
Ingredients: Serves 2.
10 brussels sprouts
1 tablespoon olive oil
1/2 medium sweet potatoe, peeled and shredded.
1 medium carrot, peeled and shredded.
1/4 teaspoon cumin
1/4 teaspoon ground coriander
salt to taste
1/4 cup chopped parsley
4 eggs
Method:
Chop the brussel sprouts roughly
Use water in a fry pan to fry the brussels, sweet potato and carrot.
season with the spices and salt and add oil.
Simmer for 5 minutes.
Whisk the eggs and pour into veggie mix.
Serve and enjoy.
