Cauliflower Tabbouleh

This is a great grain and gluten feee option packed with veggies that will support detoxification and gut health. It’s high in antioxidants and fibre to help hormonal balance and vitality. This can be used as a main meal or as a side dish.

Ingredients: Serves 2.

  • 4 Cups of cauliflower rice

  • 2 teaspoons of olive, macadamia or avocado oil

  • 3 cloves of minced garlic

  • salt to taste

  • 1 teaspoon ground cumin

  • 1/4 toasted almonds (roasted if you like)

  • 1/4 cup chopped or grated carrots

  • 1/4 cup fresh chopped mint

  • 3 spring onions

  • 1/4 cup parsley

  • 1/4 cup filtered water

  • 2 tablespoon of raw pumpkin seeds or sunflower seeds (can match to seed cycling if you’re doing this)

  • 1 tablespoon fresh lime juice

OPTIONAL: 1/2 cup cooked chickpeas

Method:

  1. In a fry pan cook the garlic using water

  2. Add the cauliflower rice with salt until tender. Remove from heat and place in a bowl.

  3. Stir in the rest of the ingredients.

  4. Serve and enjoy.
