Scrambled Eggs and Veggies

Easy no fuss scrambled eggs packed with veggies for a sustainable meal to support energy and focus.

Ingredients:

  • 3 eggs whisked

  • 1/2 cup red pepper chopped

  • 1/2 zucchini chopped

  • 2 spring onions

  • 1/2 cup green pepper chopped

  • handful of spinach

  • 1 small tomato

  • 1/2 cup chopped broccoli

  • 1/2 cup diced mushrooms

  • 1 tablespoon olive oil

METHOD:

  1. heat oil in fry pan

  2. Add all the capsicum, broccoli, zucchini and spring onions, saute for 5 minutes

  3. Add the mushrooms, tomato, spinach, saute for a further 5 minutes

  4. Add the eggs and mix until cooked through to preferred consistently

  5. Serve and enjoy x
