Scrambled Eggs and Veggies
Easy no fuss scrambled eggs packed with veggies for a sustainable meal to support energy and focus.
Ingredients:
3 eggs whisked
1/2 cup red pepper chopped
1/2 zucchini chopped
2 spring onions
1/2 cup green pepper chopped
handful of spinach
1 small tomato
1/2 cup chopped broccoli
1/2 cup diced mushrooms
1 tablespoon olive oil
METHOD:
heat oil in fry pan
Add all the capsicum, broccoli, zucchini and spring onions, saute for 5 minutes
Add the mushrooms, tomato, spinach, saute for a further 5 minutes
Add the eggs and mix until cooked through to preferred consistently
Serve and enjoy x
