Baked Potato with the Lot

These are a family favourite and super quick and easy. We love to put them into the fire-pit for a chargrilled flavour but you can also use an oven. You can have a variety of fillings as options to add.

INGREDIENTS:

  • 1 large potatoe (white or sweet)

  • 1/2 cup black beans

  • 2 tablespoons grated goats cheese

  • 4 olives

  • 2 tablespoons hummus

  • 1/2 cup chopped cucumber

  • 1 spring onion chopped

  • 1 tablespoon chopped coriander

  • 1/2 tomato chopped

  • handful spinach

Method:

  1. Bake the potato in the oven for 50 minutes

  2. Cot potatoe open, place in bowl

  3. Add all the fillings into the potato

  4. Serve and enjoy x
