Baked Potato with the Lot
These are a family favourite and super quick and easy. We love to put them into the fire-pit for a chargrilled flavour but you can also use an oven. You can have a variety of fillings as options to add.
INGREDIENTS:
1 large potatoe (white or sweet)
1/2 cup black beans
2 tablespoons grated goats cheese
4 olives
2 tablespoons hummus
1/2 cup chopped cucumber
1 spring onion chopped
1 tablespoon chopped coriander
1/2 tomato chopped
handful spinach
Method:
Bake the potato in the oven for 50 minutes
Cot potatoe open, place in bowl
Add all the fillings into the potato
Serve and enjoy x
