Buddha Bowl
Buddha bowls are a great versatile way to get loads of veggies and proteins in. You can easily make different versions of this to mix it up and keep it interesting.
Ingredients: Serves 1
1/2 cup cooked quinoa
1/2 cup grated carrot
4 olives
1/2 cup chopped cucumber
1/2 cup steamed pumpkin
handful of spinach
1/2 cup chopped red cabbage
1/4 cup edamames
1/4 avocado
1/2 cup of black beans
Dressing:
1 tablespoon tahini
1 tablesoon olive oil
1 tablespoon ACB
Mix together
METHOD:
Place quinoa in the bottom of a bowl
Arrange all other ingredients in bowl
Drizzle the dressing over everything
Enjoy x
