Buddha Bowl

Buddha bowls are a great versatile way to get loads of veggies and proteins in. You can easily make different versions of this to mix it up and keep it interesting.

Ingredients: Serves 1

  • 1/2 cup cooked quinoa

  • 1/2 cup grated carrot

  • 4 olives

  • 1/2 cup chopped cucumber

  • 1/2 cup steamed pumpkin

  • handful of spinach

  • 1/2 cup chopped red cabbage

  • 1/4 cup edamames

  • 1/4 avocado

  • 1/2 cup of black beans

Dressing:

  • 1 tablespoon tahini

  • 1 tablesoon olive oil

  • 1 tablespoon ACB

  • Mix together

METHOD:

  1. Place quinoa in the bottom of a bowl

  2. Arrange all other ingredients in bowl

  3. Drizzle the dressing over everything
