Cauliflower Pizza

This cauliflower pizza is a winner with families. It’s low carb, gluten free and you can add any toppings you like. It’s such a great way to get veggies into kids too.

Ingredients: Serves 4

BASE:

1 cauliflower cut and blended into crumbs

2 tablespoons psyllium husks

4 eggs

1 cup of almond meal

1/2 teaspoon salt

Optional: turmeric, cumin, other spice

METHOD:

  1. Mix all ingredients together, allow to sit for 10 minutes

  2. Line a baking tray

  3. spread onto tray in either circles or square depending on the shape of pizza you want

  4. Bake for 30 minutes

  5. Allow to cool to add the toppings

TOPPINGS:

Choice of roasted vegetables; capsicum, pumpkin, zucchini

tomatoe paste

olives

smoked salmon or shredded chicken

goats cheese or cashew cheese

anchovies

OTHER: hummus or pesto as a spread on the base instead of tomato base

METHOD:

  1. Spread on tomato paste

  2. lay roasted veggies on top

  3. add olives, anchovies, salmon

  4. Add grated goats cheese

  5. Bake for 15 minutes
