Cauliflower Pizza
This cauliflower pizza is a winner with families. It’s low carb, gluten free and you can add any toppings you like. It’s such a great way to get veggies into kids too.
Ingredients: Serves 4
BASE:
1 cauliflower cut and blended into crumbs
2 tablespoons psyllium husks
4 eggs
1 cup of almond meal
1/2 teaspoon salt
Optional: turmeric, cumin, other spice
METHOD:
Mix all ingredients together, allow to sit for 10 minutes
Line a baking tray
spread onto tray in either circles or square depending on the shape of pizza you want
Bake for 30 minutes
Allow to cool to add the toppings
TOPPINGS:
Choice of roasted vegetables; capsicum, pumpkin, zucchini
tomatoe paste
olives
smoked salmon or shredded chicken
goats cheese or cashew cheese
anchovies
OTHER: hummus or pesto as a spread on the base instead of tomato base
METHOD:
Spread on tomato paste
lay roasted veggies on top
add olives, anchovies, salmon
Add grated goats cheese
Bake for 15 minutes
