Adzuki Bean and Quinoa Patties

Protein rich vegan patties. It is beneficial to add more plants to our diets to decrease the risk of dietary diseases. This is a great alternative to regular meat burgers.

Ingredients: Serves 6

  • 1 tin of adzuki beans

  • 1 cup cooked quinoa

  • 6 button mushrooms

  • 1/2 cup almond meal

  • 1 flax egg (2 tablespoon chia seeds soaked in water) -you can use egg if not vegan

  • 1 teaspoon cumin

  • salt and pepper

  • coconut or olive oil to fry

Ingredients:

  1. In a food processor blend everything except the oil.

  2. Let sit for 30 minutes

  3. Roll into balls and fry in oil on both sides

  4. Serve with hummus or guacamole
