Adzuki Bean and Quinoa Patties
Protein rich vegan patties. It is beneficial to add more plants to our diets to decrease the risk of dietary diseases. This is a great alternative to regular meat burgers.
Ingredients: Serves 6
1 tin of adzuki beans
1 cup cooked quinoa
6 button mushrooms
1/2 cup almond meal
1 flax egg (2 tablespoon chia seeds soaked in water) -you can use egg if not vegan
1 teaspoon cumin
salt and pepper
coconut or olive oil to fry
Ingredients:
In a food processor blend everything except the oil.
Let sit for 30 minutes
Roll into balls and fry in oil on both sides
Serve with hummus or guacamole
