Collagen Cake Recipe

This creation came about for Dave’s birthday, which he likes to go under the radar. But to celebrate I wanted to do something a bit special and we don’t eat cake, well I don’t eat cake so to go along with getting a year older I made a collagen cake. The base is gelatin from grass fed, humanely raised cows.

Gelatin has many healing properties including adrenal support, digestive health, anti-inflammatory and skin strength. Here’s some information focusing on just one element SKIN STRENGTH.

Gelatin has amazing skin healing properties because it is a rich source of dietary collagen, which is the key protein in the body made up of amino acids. Gelatin makes up 25% to 35% of the total protein content of the human body. This protein content is vital for skin elasticity, and tone, plus the continuous renewal of skin cells. Gelatin makes up the connective tissues of the skin that are responsible for giving skin its strength and firmness.

Collagen depletion usually starts when we are in our late 20’s. It becomes more important to add gelatin to your diet after age 30 to help fight aging. Skin creams that contain collagen are useless because the collagen is too large to be absorbed by the skin. Taking it internally in the form of gelatin is a good source of dietary collagen and can do wonders for the skin.  Research performed at The University of Michigan shows the effects that collagen depletion has on the aging process. The study showed that collagen- producing cells are key for supporting youthful-looking, resilient skin. So in alignment with another year older here is the Collagen Cake…

Step 1

  • 2 tablespoons gelatin

  • ½ cup water

Bloom the gelatin with water

Step 2

  • ½ cup coconut milk

  • ½ cup water

  • 1-2 tablespoons of rice malt syrup

  • 1 tablespoon raw cacao

Heat lightly in a saucepan (don’t bring to boil)

Step 3

  • Add the gelatin to the mix in the saucepan

  • Stir until the gelatin is completely dissolved

Step 4

  • Pour in to 4 cups or ramekins or 1 big dish

  • Place in fridge to set for 15 min

Step 5

  • Repeat step 1-4 but instead of raw cacao use the juice of 1 lemon or orange.

  • Pour this mixture onto the set cacao

  • Return to fridge and allow to set again for 15 min

Step 6

  • Layer onto the set gelatin berries, sunflower seeds, walnuts, raw buckwheat, coyo yoghurt and goji berries. (or whatever mix you takes your fancy)

Serve and enjoy knowing it is not only a treat but healing at the same time.
